Best way to query for checks?

Actually, I have not tried to print checks/cheques from GnuCash myself.
 So I am not sure whether it will automatically assign numbers, but it
might, if the last used number is correctly set for that account.

In any case, one difference that I have seen between an ordinary account
register and a search result register is that the search is not updated
after an edit. Thus changing a field does not cause the transaction to
disappear or move, as it might after an edit in an account register.

You can wait until you have printed all your checks/cheques, proofread
them, and are ready to put them into envelopes to assign/verify the
numbers to the respective transactions.  Spoiling check forms may not
have happened to you yet, but it certainly has happened to me, including
the homework example.
