The Mac Gnucash.app runs just fine from a thumb drive. I do so often to test new releases on various machines.
Getting it to work on Linux would be a lot harder because of managing the dependencies on the various machines. If you're capable, you'd want to build Gnucash from source along with any dependencies that aren't provided on all of the machines and setting prefix somewhere to make transferring the whole tree (bin, lib, etc, share) to a thumb drive easy. You'd need to set up a launcher script to pre-set PATH and LD_LIBRARY_PATH, and adjust etc/gnucash/environment to get the rest right.
