Well, that proved to be embarrassingly simple: I forgot to change the version in the launcher script. I'll put up fixed dmgs on SF in a few minutes, but if you want to save yourself having to download again you can edit the line
  export PREFIX=/Library/Gnucash-2.4
to say
  export PREFIX=/Library/Gnucash-2.5
in Gnucash.app/Contents/MacOS/Gnucash.
