Gnucash doesn't have a backup command because the backing up is built in. Since you're on a Mac, you can use Time Machine for that. IIRC, Preferences>General>Retain Log Files applies to backups as well, so you can turn off the Gnucash backups and just rely on Time Machine. I keep my accounts on an encrypted dmg which I also back up to Google Drive, but the latter isn't happy about backing up the dmg when it's mounted (required for me to use it) so that's not as automatic a process as I'd like. There are a variety of other remote backup solutions available, and everyone should work out something that works for them. Gnucash account files are self contained, so any generic backup regime will work quite well.

Gnucash's preferences are saved in ~/.gconf on 2.4 and will be in ~/Library/Preferences on 2.6. Window configuration and the saved customized reports are saved in ~/Library/Application Support/Gnucash-version (e.g., Gnucash-2.4). You probably want to make sure those are backed up as well.
