You actually can sort on Description, at least in the Transaction report.  You can't subtotal, however.  If I knew Scheme,  I imagine it would be pretty easy to add it. Unfortunately, I am not a Scheme programmer. 

As for the question about projects, Gnucash doesn't provide that feature.  It is one of the most requested features from the user base, but no developer had taken or on.
