Well, that turns out to be remarkably simple to fix: Run Notepad as an administrator (right-click on it and select "Run as administrator from the context menu), then from Notepad edit C:\Program Files (x86)\gnucash\etc\gnucash\environment. Change the middle of line 56 from share/guile/1.8 to share/guile/2.0.
