Migration from Ubuntu to iMac - which files to copy, and where?

Copy the contents of the .gnucash directory from the user directory of your Ubuntu box to the user/Library/Application Support/gnucash directory on your Mac.

Copy .gconf/apps/gnucash from the user directory on Ubuntu to the user directory on your Mac.
