Using invoices before posting

Katie,
I have not started using GnuCash, before I go through the setup and learning
curve I wanted to make sure I could use the invoice for a work order to our
production department.  Thank you, your information gets me closer to making
the decision.

Not sure which invoice layout you are using, but the 'Tax invoice' 
(which you can set as the default in Edit->Preferences->Business) has 
'Invoice in progress...' where the invoice date (ie post date) and due 
date would otherwise go.  The invoice number is still shown (and the job 
number/name if you use this).
